The learner can:
- Define what a cheese is
- Demonstrate a basic understanding of how cheesemaking has evolved over time
- Provide three examples of soft, hard and matured cheeses and where they come from
- Explain the differences between three types of soft, hard and mature cheeses
- Explain the process behind making three different cheeses of their choice
- Define cheesemaking terms such as rennet, cheese-cloth, rind, etc
- Identify at least four different animals whose milk is used in cheesemaking
